<p>裏月·晴酒位於縣政十三路，這區鄰近竹北博愛國中屬安靜的生活社區，在假日時間也頗為安靜；如是與我今日相同預約板前料理，可先預約門前停車位省去停車與步行時間。<br />

<h2>竹北裏月·晴酒板前料理 環境介紹</h2>

<p>每餐期僅入坐七席，提供高隱私用餐環境。<br />
二樓空間於一樓吧檯延展自成一格，天台前以庭園概念設計，在享用職人Omakase的板前料理之前，休憩、洗滌塵埃與心情，換上裏月·晴酒備好的室內拖鞋，隨即進入另一層次的日料殿堂。</p>

<p>板前料理每次接待僅七人，預約制，料理師傅於桌前現場烹飪料理，不是以砧板為界，而是用其連結料理職人與食客的距離，若說鮮食為食材到餐桌最短距離，那這一個手肘是傳遞著最佳品味時間、溫度的體貼。</p>

日式的高級料理割烹接著就是板前，板前更是著重於生魚片、握壽司延伸料理，品嚐少見且截然不同的食材，對我來說，體會這等料理不僅是用餐，更是一番見聞增廣；Omakase 源自日語「任（まか）せる」，將餐點搭配權利交給料理職人，也就是我們所說的無菜單，以當日最新鮮的食材為原點，逐一散發成最適合的手感料理。在餐點開始前，會先展示今天選用的食材才開始進行料理。享用高級食材，酒水的點綴更能提升品嘗風味，裏月·晴酒提供5杯/8杯兩種自然酒搭配期間，不同酒品的清爽醇厚也隨著餐點翩翩起舞。</p>

<p>今天搭配有五貫握壽司，以日本北海道七星品種蒸煮的米飯，周桑以來自日本各縣市的不同魚貨，以職人手感溫度捏出最佳口感；軟絲搭配酸橘昆布鹽，以鹽味點睛，金目鯛搭配蘿蔔泥、水果醋多些酸香與在口中留下的口感。春子鯛則佐以蛋黃粉，注以更多香氣。</p>

<p>在師傅提醒下，板前料理吃的就是從師父做好到餐桌前的最短距離，時間會讓體驗的風味變化，所以我也就打消了等待的念頭，好好的享用美食美景；這時上桌的是出水竹筴魚、秋刀魚，這兩種魚都是有著金屬色澤的魚皮肉，口感稍重，恃酒適時送上德國萊茵黑森橘酒，偏酸的口感帶有柚香及梨香，作為口氣的轉換非常合適。</p>

<p>裏月·晴酒位於縣政十三路，這一區屬於住宅社區，假日時間也頗為安靜，鄰近竹北博愛國中，自光明六路轉進，路邊即有停車格很方便；停下車，行過一排林蔭街道涼風吹徐，炫目的日暈與枝葉吹拂，彷彿是前往目的地的儀式感。</p>

<p>裏月·晴酒為少見的樓中樓型態，空間上下兩層區分為二，一樓是今日的探訪日式鍋物，為活體海味、日本A5和牛專賣，二樓是高檔的日式板前、關西壽喜燒無菜單料理，每餐期僅入坐七席，提供高隱私用餐環境。</p>

<p>帝王蟹 和牛鍋物位於一樓，中島吧檯的光點，成為沉穩的視覺中心，主理人花費一年以上時間，以實木打造堪以極致工藝，細緻紋理傳來切身於原林的自然溫度，誠如在安藤忠雄展時所見 : 欣賞建築，須連同日本文化與其大自然的關聯性，與其連結並和諧地共存，即是獨一無二的元素。<br />
自挑高向下延伸，周圍兩側片片屏風搭起半開放式的用餐空間，適合情人約會或是家庭聚餐，空間包圍且預留寬敞，用餐的客人通行或餐車遞送餐點都仍有餘。</p>

<p>二樓自成一格，天台前以庭園概念設計，在享用職人Omakase的板前料理之前，休憩、洗滌塵埃與心情；板前料理席僅坐七人，料理師傅於桌前現場烹飪料理，以當日新鮮食材搭配適合酒水，為座前帶來截然不同的職人料理。</p>

<p>提供日式鍋物與板前、關西壽喜燒兩種不同料理，在<a href="https://reurl.cc/94vaed" target="_blank" rel="noopener">預約</a>時就需要先選擇，今日的日式鍋物用餐皆以菜單中序章開始，前菜、季節蔬食果盤、米飯麵食、蒸物、飲品與餐後送上的甜點。鍋物餐食都吃得差不多，會有桌邊的煮粥環節，這也是沿自日本飲食習慣，倒入白飯於湯裡，做成雜炊，滿滿肉品與海鮮精華可不要錯過。</p>

兩份熟食皆附上一顆月見蛋，撥開蛋液拌入白米飯，粒粒包圍享用迷人蛋香；初月酒香肉拌飯特別挑初瘦肉，佐以北海道奶油，有著香醇奶香；香橙鴨肝的口感鮮美，有著獨特的軟嫩口感與香氣，鮮嫩鴨胸也很嫩口值得細細品嘗。</p>

紐約客屬里肌肉和腰脊肉處的部位，有著完美的大理石紋路，在日本A5和牛的粉嫩肉色下，肉質紋路更加明顯，嫩白相間的紋路即使肉片稍有厚度但仍不敵在室溫下融化的油脂，微微的塌陷且柔軟；此處運動量大，倘若不喜好太過膩口，紐約客的肉質會比較適合國人喜好的肉感。</p>

肋眼上桌，美的就像一件藝術品，綿密分布的油花舖滿肉面且均勻，肋眼屬油花較多的部位，明顯的牛肉香與軟嫩的肉質是老饕最喜愛的肉品；和牛不是第一次吃，但是這麼大一片卻是第一次見著，3~5分熟是掌握好吃的要領，第一片可以請店員教學，再來就可以享受自己涮鍋的樂趣，畢竟這麼大一片可不常見呢~</p>

上上之選當然就是A5和牛牛小排，取自胸前肋骨部位，肉質鮮嫩多汁，自身香醇的風味極具軟嫩口感，不論涮酒香龍蝦白湯或是川香麻辣紅湯都很適合。包圍肉片的牛肉脂肪豐沛，渲染著獨特的芳香，讓和牛的香氣更濃郁。</p>

<p>活體松葉蟹在觀賞過後，會分為蒸、烤、煮三種料理，蒸為海味洵蒸，蟹體燒烤則是烤物，海味的鹹香風味四溢，可以與服務人員索取蟹針，方便挖取刨下肉絲。</p>

<p>雜炊以將接近尾聲，十年如一日、一期一會的精神仍能體現；濾除原有湯中的雜物，稀釋煮海鮮過後的湯頭，完整的每一個步驟，才下白米飯煮粥，松葉蟹黃、海苔拌入，日本主食為後的精神，每一杓都是營養滿滿。</p>

<p>最後來說說今天的飲品，冷萃紅茶看似簡單卻是繁複多工，用冷翠的方式萃取靜置一日減少茶湯澀味，有的紅玉清香；水果茶以多種水果搭配，有我喜愛的酸感甜香；喜歡抹茶芬芳，靜岡抹茶拿鐵自然是不二之選。</p>

<p>有菜單，也有酒單，裏月·晴酒主售自然酒，自然酒不算陌生，以人工干預最少的方式釀造而成，少添加所以保存環境很講究，在酒的領域中屬於永續環保生態一環；這次品嘗有氣泡酒:義大利普洛傑迪維娜蜜思嘉甜、西班牙加泰隆尼亞馬卡貝爾，白葡萄酒法國西南產區白梢楠&amp;夏多內、粉紅酒 2022 Longview Nebbiolo Rosato與紅葡萄酒 La Jave des Grandes Esperances，喜好自然酒的夥伴可別忘了，一口美酒一口美饌才是人生。</p>
