										<content:encoded><![CDATA[<p>新竹 牧人茅舍 是一家 無菜單料理 餐廳，鑽研各國料理輕鬆上桌，再一次來到也讓我重新思考起無菜單料理的原生想法是什麼?這家的老闆就是廚師.且也就只有他這麼一個廚師.只要他想,就什麼菜色都有可能,只要新鮮、原味就可以成為桌上佳餚.完全不限制自己的料理國界.對於吃過的美味尤其印象深刻.更想要完成自己心中對於料理的執著.<br />
重複的菜色只在時節與指定的時候才會出現.想要嘗嘗新鮮的節氣食材美味,家聚宴客可是非常有面子.這和許多打著無菜單卻持續賣著千古不變菜色的餐廳可完全不同啊!!</p>

<p>牧人茅舍無菜單料理位於鳳崗路的路邊.沒有熟門熟路,可能一不小心就晃過去很難發現但可不要小看他喔~許多科技公司的老闆和外縣市來的朋友都紛紛指定要來這邊聚餐.無菜單最怕的就是消費方式.牧人茅舍可以用桌菜或是每人單價定額的方式預定,且因為每天都有不同的限定料理,想吃什麼不想吃什麼都可以在預定時跟店家溝通.像現在這個季節是櫻花蝦的季節,所以今天就看到了許多櫻花蝦的料理.</p>

<p>無菜單料理一定都是中式料理嗎?當然不是.在老闆的眼中料理無分國界,他也有可能會在料理中間會穿插著中、西式或是更多異國料理,所以當你看到西式料理上桌,只管負責驚訝就好~且仔細的想想看,這也才是無菜單料理的精髓不是嗎 <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>舊化的門宅與門口植栽所營造的氛圍就像是老家一樣的老宅院,但這老宅卻又乾淨且整齊許多~門口擺放著小桌椅就好像傍晚時分鄉下的鄰居朋友都可以來這聊天乘涼.各式的點綴都帶著點懷舊感~</p>

<p>這不是一家新的餐廳.而是已經是許多人都來過且贊不絕口的口碑店家.看這牆上大家的簽名和稱讚.老闆的客氣與對於食材的尊重,這家無菜單料理可是相當成功喔~</p>

<p>海鮮沙拉<br />
把今天新鮮漁獲的花枝與各式甜椒與生菜,淋上特調的和風醬,再加上一大把的櫻花蝦,微微的酸甜感十足開胃.花枝、櫻花蝦等新鮮魚獲可是有自己的漁船才敢說尚青啦~</p>

<p>當我夾起這一片我以為是美生菜梗,沒想到是這麼誇張一大片的花枝耶!!搭著和風醬吃起來甜甜酸酸很清爽,連同櫻花蝦一起真是滿嘴豐富~</p>

<p>水果泡菜<br />
這也可以說是必備的開胃菜.酸酸甜甜的滋味有點微嗆,果香與泡菜清脆可口的味道都在嘴裡.滋味與一般的泡菜口味真是不同~</p>

<p>用餐的過程中.廚師若有時間就會出來問問今天的餐點還合口味嗎?也會分享他找尋食材的過程與哪道菜色的突發奇想與種種.不僅僅是菜色食材的選擇.他自身對於米飯的要求也是相當的重視與嚴格.他說:米飯不應該是配角,在牧人茅舍,米飯的好吃是最原始的根本.更是這家餐廳最基本的自我要求.<br />
這一大碗的米飯看似平凡.細細了解才知道原來這碗裏頭米的種類並不是只有一種而已,除了我們常吃到的壽司米之外,還精心挑選自己想要帶給客人口感的米種.就連煮飯時的水都是非常的講究.</p>

<p>果然吃起來米粒口感分明,有點黏又不會太黏的口感.咬下去QQ的還會再幫你反彈起來一樣呢.</p>

<p>正宗泰式紅咖喱<br />
這是道老闆去泰國旅遊時所記下來的菜.他喜歡到處遊歷並記下過程中最好吃最有趣的菜色.回到台灣後用自己的方式解開密碼再重新詮釋.喜歡用水果入菜的他.讓這道曼谷名菜在他的餐廳裏頭記憶重生.</p>

<p>使用兩種水果入菜調味.泰式紅咖哩的麻辣到他的手上,聞起來除了椒麻感現在更多了水果酸甜的味道.鳳梨和柳橙甜蜜溶入這道咖哩當中.</p>

<p>鳳梨肉已經打成泥狀均勻的淋在冬粉上.豐富濃郁的水果酸酸的甜甜的,再多一點點微辣的感覺在嘴裡.</p>

<p>水果成泥的醬汁沾染在大蝦上,蝦肉鮮美肉感紮實.新鮮蝦香果甜.已經讓我開始想念那甜甜的滋味了呢.</p>

有別於燒肉店用烤的,他是用炒的.口味清爽又稍微有點甜甜的味道是小朋友最喜歡的了.撒上一點點芝麻香香的.</p>

蛋最近可是價格飆漲,不過店家仍堅持所選.選用特別飼養益生菌的雞所產出的雞蛋,搭配上古法製作的醃瓜.</p>

<p>科技堅持加上古老智慧的延續~正季食材也是廚師的堅持,煎蛋也鋪上新鮮的櫻花蝦,吃的是絕對的新鮮.煎蛋邊緣煎得有點焦香.鹹鹹脆脆的滋味更香醇.</p>

<p>藥膳牛肉湯<br />
這個雖然是沒有表演給我們看啦 XD 這鍋可不是久煮的牛肉湯喔~鍋裡放上厚度適中的牛肉切片,沖下滾燙的肉湯將其瞬間川燙而成.每一片肉片燙的熟度剛剛好.肉片帶著一點點粉紅色的肉感就是絕佳吃的時間.牛肉口感鮮嫩微甜剛剛好~</p>

<p>使用自家調配的中藥材熬煮的藥膳的中藥材味道香芬適中.上面一塊一塊浮著的是川燙下的牛油.吃著喝著就好像吃著一整只牛的感覺,元氣都補滿了呢.</p>

<p>老闆的特調的小魚乾辣醬和這皮蛋辣醬也更是饕客所愛.喜歡吃辣的朋友可以問問還有沒有皮蛋辣醬.這也是老闆記憶中的辣醬味道.是創新也是個尋味之旅.吃起來辣度十足還有一點甘甜味呢~</p>

<p>其實剛進門是讓我有嚇一跳~因為已經滿滿的人了阿~~<br />
名古屋空間雖不算大,但桌椅擺放、客人活動空間都有預留足夠,所以倒也不會感覺坐得不自在~<br />
師傅帶座位也會給我們一個置物籃可以放包包,很貼心~</p>

<p>這次我點的是1000塊無料理菜單,再加上單點的烤鮭魚頭、限量鱈場蟹蟹腳、螃蟹鍋還有培根手工串~</p>

<p>最先上的是這個小品(餐前開胃沙拉)鮑魚沙拉以及一杯開胃醋,開胃醋的味道不會太濃烈,就是讓你在舌尖上感覺酸酸的轉一下~</p>

<p>炸雞的口味有擠上美乃滋所以味道稍微比較偏甜.<br />
炸鰻魚很不錯~而且還是包覆著麵條下鍋炸~口感上酥脆.<br />
再推一下盤上的沾醬,這沾醬風味不錯,稍帶酸辣且順口~這個醬好吃呢~~</p>

<p>烤物搭配的是牛小排與雞軟骨<br />
雞軟骨醃制夠味,嘗起來帶著燒烤醬那一點點甜甜的味道,看我只能從小花那邊拿到一小口來吃就知道了~<br />
這樣的口味小孩子都還滿喜歡的~</p>

在處理鱈場蟹蟹腳可不容易,光是保存和運送過程若是不小心讓蟹腳折斷,這賣相與成本可就差距甚遠了~<br />
所以蟹腳也就更為珍貴~</p>

<p>店家也是有處理一下蟹腳,在吃的時候也很容易,連小草都可以自己撥開蟹腳自己挖肉來吃!!!<br />
蟹肉稍微帶點焦香味,蟹肉味道可是相當濃厚的香阿~用烤的方式呈現還真不同呢</p>

這一道真的是覺得好划算~湯裏頭裡面有螃蟹、鮭魚骨、蔬菜,使用的是味噌湯底融合高麗菜的甜味,味道超濃超甘甜~</p>

要再吃點更不同的美味料理當然是可以在把預算提高給店家,讓店家幫你搭配更適合的質量或是份量~<br />
這天在店家粉絲團上面還看到了有趣的計算公式.其實我根本相信會真的去看完內容的人一定超少~<br />
以走精緻質量的日式料理店家來說,名古屋這樣的作法薄利多銷,也希望可以在菜色上做一定質量給客人挑選~算是頗用心的一家店喔~<br />
